Happy as a clam with this weekend’s special: Spaghetti alle vongole con bottarga. Fresh Manila clams, generously shaved bottarga, and of course our fresh spaghetti. Simple clean & fresh. In Sicily, you’ll see bottarga from tuna, but this uses bottarga from mullet - a brinier and brighter type of bottarga and a specialty of Sardegna. Think of it as a seafood version of parmigiano. Buon appetito!

Experience Mike’s unparalleled commitment to ramen technique alongside Tortello’s Dario Monni and Chef Annie’s passion for handmade Italian pasta. Together, you’re in for an interactive, playful journey through live chef demos, the "why" behind the dough, and the wonderful differences & similarities between these two worlds of master craft. We’ll be diving deep into a head-to-head tasting, featuring both "soup" and "soupless" expressions of each tradition. This weekend’s special: Spaghetti alla Carbonara. Our fresh, al dente spaghetti tossed in a silky sauce of super amber farm egg yolks, Pecorino Romano, freshly cracked black pepper, and crispy guanciale. Creamy, salty & savory. Buon appetito! And a little fun fact: a respectable carbonara NEVER uses cream.
This weekend’s special: Stracci al Sugo d’ Agnello. Our fresh, hand-torn “little rags” pasta tossed with tender braised lamb shoulder in a rich lamb sugo, finished with parmigiano and a fresh touch of mint. Buon appetito!
Weekend special: Paccheri Salsiccia e Peperone 🍝 Sweet caramelized onions cooked low + slow, salty browned ground pork, a pop of roasted mild italian peppers with a touch of chili then topped with parmigiano. Inspired by the lunch that Dario’s papa used to make for him when he’d come home for lunch during the school day so we call The Salvatore. 🍴 😋
This weekend’s special: Bigoli con Calamari al Nero Seppia. Fresh squid-ink bigoli tossed with tender calamari in a silky squid-ink, white wine and sweet estratto sauce, finished with a tiny touch of chili. The bigoli comes from Venice (like Dario) and squid ink sauces are commonly found both in the veneto region as well as in Sicilia. Ours gets an extra umami punch from the Sicilian estratto that we use (and couldn’t live without in our own home pantry). North or south, no matter; this dish is the sea through and through. A black mouth is the sign of a dish made right! Buon appetito!
